Eating out

I hate the thought of eating out. But wouldn't you know it, we will be out during dinner time tonight and will have no choice. It's not just finding things he CAN eat, I know about BK and Outback steakhouse, but even letting him see the good food others are eating. I just feel so bad! Ugh, we will see how it goes....

Pepperoni bread

This stuff is GOOD!!! I wanted to eat it, but I do not eat his gluten free food ONLY because it is so freaking expensive!!!! I got it from gfcfrecipies blog, which there is a link of off this site.



GF Pepperoni Bread

- make one Noah's Bread recipe
- add 1/2 tsp salt
- add 1 tbsp sugar
- cut up as much gf pepperoni (like Wellshire Farms, Applegate Farms or Hormel) that you want. Of course, you could use any meat, or salami, etc. Using more makes it more appealing, and filling.
- 1 flax egg (1 tbsp flax meal mixed with 3 tbsp water; heat in microwave 30 secs and let sit 5 mins.) I used a regular egg
- corn meal Didn't have any so I didn't use it and it was still good

So, mix the bread recipe, add the other ingredients. Spoon into about six lumps on a lightly greased baking sheet. Smooth the tops of the lumps down by wetting the back of a spatula or spoon - form the lumps into rounds. Sprinkle corn meal over the tops. Bake according to the Noah's Bread recipe.

Starting week 2

So we have one week under our belt and its getting a little bit harder. My son is starting to realize what it is he can't have, I have been acting excited about what he CAN have but he is getting wise. The other day he told me he cant stand not having ice cream, :( But he is still being a good sport overall. Haven't noticed any changes yet, AT ALL. But I will give it a whole month before I give up. I have to be honest, I am on the fence about whether or not I want it to work, just because its so hard to keep up with. My son doesn't have too many behaviors, but there are enough that he will have to go back on some kind of medication if this doesn't work.
On a good note, I have discovered that he will eat almost anything if its dipped in barbecue sauce, so he is trying new things now! That is an exciting development!

Alton Brown's chocolate chip cookies

8 ounces unsalted butter
11 ounces brown rice flour, approximately 2 cups
1 1/4 ounces cornstarch, approximately 1/4 cup
1/2-ounce tapioca flour, approximately 2 tablespoons
1 teaspoon xanthan gum
1 teaspoon kosher salt
1 teaspoon baking soda
2 ounces sugar, approximately 1/4 cup
10 ounces light brown sugar, approximately 1 1/4 cups
1 whole egg
1 egg yolk
2 tablespoons whole milk
1 1/2 teaspoons vanilla extract
12 ounces semisweet chocolate chips

Preheat the oven to 375 degrees F.

Melt the butter in a heavy-bottom medium saucepan over low heat. Once melted, pour into the bowl of a stand mixer.

In a medium bowl, sift together the rice flour, cornstarch, tapioca flour, xantham gum, salt and baking soda. Set aside.

Add both of the sugars to the bowl with the butter and using the paddle attachment, cream together on medium speed for 1 minute. Add the whole egg, egg yolk, milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Add the chocolate chips and stir to combine.

Chill the dough in the refrigerator until firm, approximately 1 hour. Shape the dough into 2-ounce balls and place on parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes, rotating the pans after 7 minutes for even baking. Remove from the oven and cool the cookies on the pans for 2 minutes. Move the cookies to a wire rack and cool completely. Store cooked cookies in an airtight container.

Day at the Park

Yesterday we went to a local amusement park at eating was not an issue thank goodness! He had a hamburger on a plate and fries (I am told are fried in a dedicated fryer). Although he dislikes not having a bun, he ate it just fine. I packed many gluten free snacks, including slim jim jerky snack, not the regular slim jim. According to the ingredients the regular slim jim contains wheat, but the jerky does not, but I am going to double check on that. He got a snow cone and cotton candy (only ate the snow cone, kept cotton candy for home). So far the diet is going good, not too many complaints except that he misses pizza. I have also not seen any changes in behavior yet, but it's still early. Today is day 6.
Last night we made a chocolate chip cookie recipe developed by Alton Brown who you may know from Food Network. Rave reviews!! Recipe posted separately.

Lunch

My boy is coming to my work for lunch today, which is stressful because he better like what is brought for him or we are outta luck!! I am going to eat something he hates like salad so he's not jealous!!
I found out that the local amusement park has a fryer for just fries to tomorrows trip might not be totally horrible. That and he can get hopped up on cotton candy too!!
Tonight I attempt chocolate chip cookies.

Peanut Butter Cookies

From Bob's Red Mill website

INGREDIENTS:


1 cup Peanut Butter
1 cup Brown Sugar
1 slightly beaten Egg
1 tsp Vanilla extract
1 tsp Baking Soda
2 Tbsp Gluten Free All Purpose Baking Flour

Preheat oven to 350�. Mix ingredients together and roll into 1 inch balls and bake on an ungreased cookie sheet for approx. 8 minutes. Makes 24 cookies

I rolled the cookies in sugar before placing on the cookie sheet, YUM!

Noah's Bread

Original Noah's Bread

This is the original version of Noah's Bread, developed by Kwan for her son Noah when she couldn't find any bread he could eat.

Ingredients:
1/2 cup brown rice fl. (I subbed sorghum)
2/3 cup tapioca flour
1/3 cup corn or potato starch
2 tsp xanthan gum I had no clue what this was, I found it in a health food store, it looks like flour
2 tsp baking powder
1/2 tsp salt
1 egg (or sub)
1/3 cup oil
1/2 cup CF milk (or water)
1/3 cup sparkling water

Recipe
Preheat oven to 400 degrees

Mix all ingredients well, except the sparkling water. Once the batter is well mixed, add the sparkling water to make the batter rise.

Work quickly and form batter into buns, bagels, roll, etc. I use hamburger form pans and rings from the Gluten Free Pantry but you can also use aluminum foil to make form rings. I also put the batter into large ziplock bags, cut a corner, and squeeze out the appropriate shape of whatever I'm trying to make, such as bagels.

The batter should be thick and look somewhat lumpy. Don't use too much batter or form too high. The bread will puff and rise and settle back down once cooled.

Bake for 20-25 min until the crust is golden brown.
The crust will be hard out of the oven but will soften once cooled.

They freeze and thaw really well.
Note: This is not for a full sized loaf

Just like McDonald's Chicken Nuggets

- chicken: I cut up about 3 breasts.
- 1/3 cup gf flour (I used about 80 percent brown rice flour and 20 percent tapioca)
- 1/4 tsp sea salt
- 1 1/2 tsp Heinz vinegar (or other gf brand)
- 1/4 tsp baking soda
- 1/3 cup water

So, you mix the flour and salt in a bowl. Then, combine the vinegar and soda in another small bowl, quickly dumping it in the flour as it reacts. Then, quickly add the water. Whisk well. Let this sit for about 5 minutes. It thickens. Meanwhile, heat some oil in a frying pan. Mix your chicken pieces in the batter and let them sit in there while the oil heats. When hot, fry until golden brown and cooked through.

Day Three

I am becoming quite the chef trying new things for the diet. Last night my son and I made homemade chicken nuggets with the absolute BEST recipe there is. These were supposed to taste exactly like McDonald's but they are SO much better. I made about 15 nuggets from one breast of chicken and he devoured the entire thing. Thank you JIM!!
We also made bread with the famous Noah's bread recipe. The particular one I had was not quite big enough for a bread pan, but I wasn't aware of this so I ended up with a flat lumpy unappealing looking load. BUT, after slicing it up, I realized I could make mini garlic breads out of it using Smart Balance Light (according to many others it HAS to be the light, says right on the label its dairy free). Well anyway so far so good. He ate some delicious Buckwheat waffles this morning for breakfast and took two homemade peanut butter cookies and grapes for his snack. That recipe is on Bob's Red Mills site, I can't seem to access it right now.

Day Two

So we are on day two of a strict Gluten Free/Casein Free diet and also limiting soy. I am doing this for my 9 year old son who has been diagnosed with ADHD and has been on medication since kindergarten. He has been of his meds all summer and has been doing so great I never want to put him back on. So I am attempting a diet change to hopefully change his behavior enough that the schools wont be on my back to put him back on. ANYWAY, I didnt listen to any of the people who told me to get prepared and all that good stuff. We just jumped in head first. I spent about $170 on groceries over the weekend just for him, so obivously I am doing everything the lazy way right now. I did buy ingredients for bread, which is the worst thing ever to try and make gluten free, so wish me luck!
